What processing method is used for your green coffee beans?
At Finca La Cimarrona, we currently exclusively use the washed processing method for our green coffee beans. This traditional approach, passed down through generations, involves removing the cherry pulp before drying the beans. While we focus on this method for now, we are open to exploring other techniques in the future as we strive for quality and innovation.
How do you ensure the quality and freshness of your coffee beans?
At Finca La Cimarrona, quality and freshness are paramount. We start by carefully selecting seeds for germination and continue to nurture our plants, monitoring for diseases and nutrient deficiencies. During picking season, only the ripest cherries are selected. Our dedicated workers play a crucial role in maintaining quality standards. We also prioritize machinery maintenance and innovate with new technologies to ensure freshness at every step.
What varietals or cultivars are available in your selection of green coffee beans?
Our selection of green coffee beans includes a diverse range of Arabica varieties from the Sarchimor and Catimor groups. Currently available varietals include Anacafe 14, Parainema, Catigua Mg2, Arara, Paca Estrella, Catimor 129, and Lempira.
